Full of the sweet, fruity flavours that are unlocked by extra long fermentations in wooden washbacks, our New Make Spirit is the perfect way to toast our island whisky as it matures.
With orchard fruit on the nose and a lingering biscuity nuttiness on the palette, our unpeated New Make embodies the flavours of heritage barley, yeast and water straight from the stills.
Our peated New Make delivers soft peat ash, sweet malt and desiccated strawberry on the nose, a robust oily texture and notes of sweet dried cranberry on the palate, leaves a bready, earthy finish with hints of fresh coffee grounds.

25ml simple sugar syrup
25ml lemon juice
5ml Bitters
