LEGAL (AT LAST)
When it comes to Whisky, the Uibhistich (Gaelic for Uist folk) are no strangers to a single malt. Surprisingly though, our distillery will be the first ever on the island, well legal one that is. Stories and songs passed through the generations tell of illicit stills supplying whisky for crofters, fishermen and other island friends to enjoy a dram or two a after a hard days work. So while distilling is certainly not a new thing on our island, the legal part is!
THE ISLAND CALLS
A family business at heart, North Uist Distillery Co. was founded by Kate & Jonny, North Uist natives who, having sampled life on the mainland, found themselves being called back to their island home.
MEET JONNY
With a distilling and brewing background, the time felt right for Jonny to strike out and make a living for himself as a master distiller on his island home. His family have long been an integral part of the island's fishing community, and while Jonny searched for adventure away from home, he was called back by the ultimate dream of starting his very own distillery and adding a new chapter to his family’s history with the island.
MEET KATE
An island native, Gaelic speaker Kate’s links with North Uist run deep. Many generations of her family were crofters on the island, and she’s proud to be able to promote a new generation of crofting - providing people with a reason to grow the island’s trademark organic bere barley. Passionate about making things happen, this creative couple are proudly building a thriving new business on their home island - creating a world class single malt on the Outer Hebridean Isle of North Uist.
A NEW DISTILLERY
Built way back in the early 1700s, and bursting with island charm, the historic Nunton Steadings building on Benbecula will be the site for our brand new distillery. With a rich history - including tales of Bonnie Prince Charlie and his connection with Nunton, this amazing U-Shaped building features beautiful original cobbled floors which will be the perfect place for our whisky casks during maturation as well as a home for our planned visitor centre.
